Quancai Sun is an Assistant Professor at Florida State University. He earned his Ph.D. from the University of Massachusetts Amherst and completed postdoctoral training at the National University of Singapore. His research focuses on food chemistry, nutritional toxicology, and the gut microbiome, investigating how food-derived bioactive peptides and phytochemicals mitigate oxidative stress, colitis, and metabolic disorders. Recent work includes characterizing sturgeon ovarian peptides for osteoblast protection, elucidating chicoric acid’s modulation of gut microbiota in DSS-induced colitis, and examining insecticide exposure’s effects on high-fat diet-induced metabolic dysfunction. He serves as Associate Editor for Current Research in Food Science and on editorial boards for Critical Reviews in Food Science and Nutrition and Food and Chemical Toxicology, with collaborations spanning institutions in the US, China, Singapore, and Europe.
